Spicy Cheese Balls

No matter what time of the year you serve these they are a winner. Holiday favorite or mid-summer buffet! Easy to make and travel and sure to have no leftovers.

Ingredients:

1 pound spicy sausage
1 pound cheddar and Monterey Jack cheese, shredded
1 1/2 tablespoon chili powder
1 1/2 teaspoon cumin
1/4 bunch of cilantro, finely chopped
6 green onions, finely chopped
2 hot peppers, finely chopped
3 cups instant biscuit mix
Salt and pepper to taste

Directions:

1. Preheat oven to 300 degrees.

2. Blend all ingredients in a large mixing bowl. Roll into meatballs, small in size. Arrange balls onto baking sheets.

3. Bake for 20 minutes or until a light, golden crust has formed. Test one ball to ensure meat is thoroughly cooked. If not, return to oven for 5 to 10 more minutes.

4. Remove and cool. Serve with melted nacho cheese. Creates about 100 small meatballs.
