<p>No matter what time of the year you serve these they are a winner.  Holiday favorite or mid-summer buffet!  Easy to make and travel and sure to have no leftovers.</p>
<p>Ingredients:</p>
<p>1 pound spicy sausage<br />
1 pound cheddar and Monterey Jack cheese, shredded<br />
1 1/2 tablespoon chili powder<br />
1 1/2 teaspoon cumin<br />
1/4 bunch of cilantro, finely chopped<br />
6 green onions, finely chopped<br />
2 hot peppers, finely chopped<br />
3 cups instant biscuit mix<br />
Salt and pepper to taste</p>
<p>Directions:</p>
<p>1.  Preheat oven to 300 degrees.</p>
<p>2.  Blend all ingredients in a large mixing bowl. Roll into meatballs, small in size. Arrange balls onto baking sheets.</p>
<p>3.  Bake for 20 minutes or until a light, golden crust has formed. Test one ball to ensure meat is thoroughly cooked. If not, return to oven for 5 to 10 more minutes.</p>
<p>4.  Remove and cool. Serve with melted nacho cheese. Creates about 100 small meatballs.</p>

<p>Fresh Fruit Salsa</p>
<p>Ingredients</p>
<p>Two apples (preferably Fuji or Granny Smith)<br />
Three kiwis<br />

<p>5) Chill for 10 minutes and serve with cinnamon tortilla chips available at the grocery store.</p>
<p>If you wish to make cinnamon tortilla chips on your own, consider the following recipe:</p>
<p>Cinnamon Tortilla Chips</p>
<p>Ingredients</p>
<p>2 tablespoons of granulated sugar<br />
1 teaspoon of ground cinnamon<br />
8 (8-inch) flour tortillas<br />
6 tablespoons of butter (melted)</p>
<p>Instructions</p>
<p>1) In a small bowl, combine the sugar and cinnamon. Set aside.</p>
<p>2) Brush melted butter on the tops of the tortillas.</p>
<p>3) Cut each tortilla into eight wedges.</p>
<p>4) Arrange the tortillas in a single layer on a baking sheet.</p>
<p>5) Lightly sprinkle the cinnamon mixture on top of the tortillas.</p>
<p>6) Bake in the oven at 400 degrees for 4 to 6 minutes. Store in an airtight container for later use.</p>
