Food Myths: True or False

It’s impossible to tell just how, why or food myths originated.  They do seem to stick around for a long time. When it comes to discerning fact from fiction, it’s not always wise to listen to what your mother and grandmother have said.

Here are a few favorite food myths. Which ones have you believed?

Great Catch Tacos

Kids will eat so many more things if you tell them it’s a taco.  These are simply delicious with the homemade lime coleslaw.
Ingredients:

3 Tbsp. mayonnaise
Grated zest and juice of 1 lime
3 C. coleslaw mix
2 scallions, white and green parts, chopped
2 Tbsp. chopped fresh cilantro, optional
Salt and pepper
3 Tbsp. olive oil
1 lb. fish fillets (unbreaded), cut into 6 equal portions
1 tsp. chili powder
Salt
¼ C. all-purpose
12 corn tortillas, heated

Spring Chicken Bake

Spring Chicken Bake

Ingredients:

2 pkgs. (10 oz.) frozen broccoli spears, slightly thawed.
6 cooked boneless skinless chicken breasts
Salt and pepper to taste
½ C. butter or margarine
1 (8 oz.) pkg. cream cheese
½ C. mayonnaise

Directions:

1.  Preheat oven to 350 degrees F.

2.  Place broccoli in a 9 x 13 inch casserole. Arrange chicken on broccoli. Sprinkle with salt and pepper.

Morning Hash

Morning Hash

Hash or scramble is a staple here at our house.  These are the basic ingredients, but we combine so many other veggies and meats on different occasions.  Try it with breakfast sausage, peppers and mushrooms for a different flavor.

Ingredients:

¼ C. (½ stick) butter or margarine
5 medium boiling potatoes, cooked, peeled and cut into 1 inch cubes
½ tsp. seasoned salt
Salt and pepper
2 (4 oz.) pkgs. sliced smoked ham, cut into ½ inch wide strips
4 eggs beaten with 1 Tbsp. milk
2 Tbsp. chopped fresh parsley

Southern Salad

Surprise Southern Salad

There are very few items in this recipe that everyone doesn’t like.  This is a great recipe for the kids to learn to cook with.  They can nibble on items as they are making it.

Ingredients:

1 pan of cornbread, baked and cooled
7 to 9 slices bacon, cooked until crispy, drained and crumbled
1/2 cup chopped onion
1/2 to 1 cup green bell pepper, chopped
2 large tomatoes, chopped
1 to 2 hard-cooked eggs, chopped
1 cup mayonnaise
Salt and pepper, to taste
